Sunshine was at a Halloween party tonight, and Punky needed snack to share with friends at preschool, so we had a baking party. We used a very simple recipe and made two batches. First, Punky & I made a batch, then I let Belle loose to make the second. Yum!
Recipe:
1 box yellow cake mix
1 15 oz. can of pumpkin (NOT pumpkin pie filling)
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. cloves
Mix all together and evenly fill 12 prepared muffin cups. Place in preheated 350 oven for 20-25 minutes, or until toothpick comes out clean.
Punky wanted to add sprinkles to her muffins, which I thought was appropriate because their color this month is orange. The teachers hinted that a snack related to the theme would be fantastic...so pumpkins: check. Orange: check. Snack is ready!
PS...Have you ever baked pumpkin muffins with a princess? Or a gymnast? I'm so lucky! (The girls were actually in costume because we were having a party at home while Sunshine was at her party away from home.)
